What's for dessert at Rachel's Delectables in honor of St. Patrick's Day? How does Pistachio Cheesecake sound? A blend of cream cheese, sour cream, pistachio pudding, small pieces of pistachios on a chocolate Oreo cookie crumb crust, topped with a light coating of fresh whipped cream underneath a bed of crushed pistachios.
Pistachios are one on my favorite nuts to snack on, so I really can't wait to taste the merger of two of my favorite foods: Cheesecake and Pistachios. I will have to enjoy in moderation or follow it up with a heavy dosage of physical activity. I am fighting the fight with Weight Watchers, so I can't afford to live unbalanced in my diet, but there are still some pleasures to enjoy in moderation!

Somehow over the years green and the use of Shamrocks to commemorate St. Patrick grew. St. Patrick's Day is probably the most widely celebrated saints day in the world. What will you be doing to celebrate the day?
